The Ohio State Buckeye Ice Cream Cupcake

I've never considered myself a social butterfly.
I knew when I went to college that I'd be the paranoid friend.
"Well, how are we going to get home?"
"I'm underage!"
"I just don't feel comfortable using a fake ID to get into Canada. It would be my luck I'd be stuck there"
"My parents would kill me!!"
And even though I was the paranoid one when it came to, well...social events, I was first in line for the, "I'm finally 18, away from home, and have my own money, tattoo."
Yep. Out of all of my friends that night, I was the only one who came home with Ink.
That was my rebellious moment in college.
I loved college.
The fall football games. The dorms (yeah, I'm weird). The freedom from being away from home.
My lovelies of Alpha Xi Delta. It was great!
I'm from Ohio, and to most kids in Ohio the only college to go to is
The Ohio State University
but for me, that spell ANXIETY in every language.
So instead, I went to the great
University of Toledo.
I loved it and I miss that campus so much.
But I have to tell you, I am a huge OSU Football Fan!
And I am positive God knew what he was doing when he put me here on Earth in Ohio because I LOVE Buckeyes. And I'm not talking football or tree's here people.
The candy.

So when I saw the ad for this
 I decided to pay homage to my home state of Ohio and make a Buckeye inspired cupcake ! Or what I would like to refer to as
The Ohio State Buckeye Ice Cream Cupcake
This is the Cupcake Project and Scoopalicious 5th Annual Ice Cream Cupcake Contest!
A chance for bakers everywhere to showcase their Ice Cream Cupcake creations for a chance at $250.00 to their favorite cooking/baking store and many other "sweet" prizes!
I've seen this post on Cupcake Project for the last few years and decided this year I wanted in on the action. So I decided to go with
The Ohio State Buckeye Ice Cream Cupcake
It's a mix of my most favorite chocolate cupcake, homemade peanut butter ice cream, peanut butter and chocolate topping.
Yum with a capital Y!!
I am totally addicted to these!
And they're pretty simple to make. Here's what you'll need!

For the Cupcakes:
1 Devil's Food Cake Mix
4 large eggs, room temperature
1 cup sour cream, room temperature
1/2 cup unsalted butter, melted
1 small box of Chocolate Jell-O Instant Pudding
3/4 cup Guinness beer, room temperature

For the Peanut Butter Ice Cream:
1 cup Half and Half
2 Tablespoons sugar
1/2 cup salt
1/2 cup creamy peanut butter

Toppings:
1/4 cup creamy peanut butter, melted but cooled.
Chocolate Magic Shell Ice Cream Topping

Here's what you do!

In a large mixing bowl combine eggs and sour cream. Mix well.
Add in Pudding Mix.
Slowly add in melted butter, mix well.
Alternatly add cake mix and beer, mix just until it is mixed together. Do not overmix.
Fill cupcake wrappers 2/3 full and bake at 350 degrees for 15-18 minutes.
Remove from pans and allow to cool completly.

In a small ziploc bag combine Half & Half and Sugar.
Fill a large (gallon) ziploc bag half full of ice. Pour salt into large bag.
Place small ziploc bag inside large bag, be sure both bags are sealed completely.
Shake bags for 5 minutes.
Remove small bag and carefully rinse bag with cold water.
Pour ice cream into a small bowl.
Mix in creamy peanut butter.
Place in freezer and allow to set for 30-40 minutes.

Once cupcakes have cooled, remove wrappers and slice in half. Place bottom slice of cupcake into a clean cupcake wrapper.
Spoon some ice cream onto bottom half of the cupcake and place the top half of the cupcake back on top.
Spoon some peanut butter topping over the cupcake top.
Place some of the ice cream into a piping bag and pipe a swirl of it on top of the cupcake.
Cover the ice cream "frosting" with Chocolate Magic Shell topping.
Dive in with a big spoon!!!

This was so much fun. I went through so many ideas in my head before I decided on this cupcake and although all of those ideas sound delicious,  I couldn't pass up the chance to mix peanut butter and chocolate!

Popcorn Crazy {Round 2}

So remember yesterday I said that I was Popcorn Crazy. And I mentioned that I was going to be crazy and make two flavors. Well here's flavor # 2.
And I have to say, as crazy as I was about that one, I am TOTALLY CRAZY about this one!
I love anything mint.
I mean seriosly, I think the gal at Tim Horton's knows me when I pull into the drive thru, (good morning Kim, another Medium Mint Iced Cap today?)
Although now with my new car it's like I'm a secret spy and I can sneak up on them.
Did I mention I love mint.
And chocolate.
Who doesn't love chocolate?
I'm sure there's someone out there who says, "oh, I just don't like chocolate, it has too many calories." Well I'm sorry, deep down inside there's a Chocoholic standing at the locked dungeon door, fists clenched, screaming at the top of her lungs trying to get out. Trust me, I know. I've tried puting mine there!
Didn't work. Obviously!
So back to this round of popcorn.
I just don't know what else to say about it, except, prepare yourself to be totally overcome with joy when you pop this into your mouth. I bet this would be so cute wrapped up in a nice little package at Christmas or something, but mine didn't make it longer than 24 hours.
And yes. I shared.
I didn't eat the entire batch myself.
(although I'm sure I could have)
So now that you know about Mint Chocolate Chip Popcorn...

Popcorn Crazy

I can't think.
I'm having such a hard time writing this post.
Do any of you ever feel that way?
I don't know what it is.
This recipe is so simple, but OH SO GOOD.
I'm having just as hard of a time trying to stay out of it.
It's a good thing that I'm going to work tomorrow because if I wasn't and had to sit in this house with this popcorn I'm sure I'd gain another 50 lbs.
And with an impending doctors appointment next week I can't afford to gain any more.
Do you remember back a few weeks ago I showed you this (man that stuff was good!)
Today as I was sitting here, basically waisting time, being productive, while the baby was sleeping, I had an idea.
Why not try one of the other flavors. Heck, why not make it two!
I'm kind of crazy like that.
Then I decided I'd try one at a time.
The first one up...

Popcorn, chocolate marshmallow coating, graham cracker crumbs!
H E A V E N!!!
I am totally in love with this crap stuff!
It has totally blown my diet I'm sure, but I don't even care, it's so worth it!
Dear hubby even liked it. And he's really not a big popcorn person. Who wouldn't love this though. I'm totally patting myself on the back for this, and I don't care one bit!
I just hope that all of you will try this. It is so good and so simple.
So go. Now.

Kid & Caramel Overload


Do you ever have days where you just wish you could call a do-over.
I'm having one of those days.
Since becoming a parent 7 years ago I've learned that sleep is never a given. Especially sleep on the weekend. I don't know why in the last seven years I've fooled myself by thinking, "oh they'll sleep in tomorrow I'm sure!" It never happens that way. I've so badly wanted to sleep in the last couple of days, but dear little Sophie decided that she wants to be up early, and has all of a sudden decided naps are no longer part of her schedule.
She has been fighting a nap for the last hour or so, no matter what I do. I'm about to loose my mind. So what do I do? I sit down at the computer and begin to type.
Because I know that most of you can relate.
I know that like me, you too have had those never ending, tear filled days where you just want to throw in the towel and scream,
"I QUIT!"
But we can't quit. We can't give up on our kids or ourselves.
We have to trek on, apron strings tied and smile on our faces.
It's not always fun, but it's defnitly rewarding. That the Kid Overload part.
If I had a gallon of Peanut Butter Buttercream today, I'm sure I'd have already eaten the entire container.
But instead of Peanut Butter today, I've got Caramel.
Caramel Cupcakes filled with Caramel and topped with Caramel Buttercream
Yep, that's the Caramel Overload part.
I know some of you have never attempted the whole homemade caramel process. And trust me, as many times as I've attempted it, I'd rather buy it in a jar at the grocery.
I was searching for a caramel recipe and that's when I found the greatest way to do this EVER!

I'm not sure if this really counts as "caramel" or not, you decide, I really don't care, I refer to it as the sweetest, yummiest, carmaliest thing I've ever made or tasted.
Okay, so here's what you need to do first.

Simple Homemade Caramel Sauce

1 can Sweetened Condensed Milk
1 Crock Pot
That's it!
Peel the label off of the Sweetened Condensed Milk.
Lay it in your crock pot.
Completely cover it with water.
Cook on Low for 8 hours.
Remove from Crock Pot and Voila! Caramel Sauce!

I told you! It is so easy! And no, I did not eat it right off of that spoon. I wanted to. But I practiced self control in this particular case!
Now, once you have your caramel sauce made, it's time to bake up the cupcakes.

Caramel Cupcakes

1 Golden Butter or Yellow Cake Mix
1/2 cup unsalted butter, room temperature
2/3 cup milk
3 eggs
1/2 can caramel sauce (homemade kind works best!)

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin tins.

In a large mixing bowl, combine the cake mix, butter, milk, and eggs until everything is incorporated. Slowly add in caramel sauce and mix well.

Using an ice-cream scoop, fill the muffin tins 2/3 full.  Bake for 15-18 minutes or until tops bounce back.

Remove from pans and cool completely on a cooling rack.

Once cupcakes are cooled, pipe some of the left over caramel sauce into the top of each cupcake. I used a large round decorating tip for this.

Caramel Buttercream

1/2 cup unsalted butter
1/2 cup shortening
1 teaspoon vanilla
4 cups powdered sugar
3-4 Tablespoons milk
Caramel Sauce

In a large mixing bowl combine butter and shortening. Add in vanilla. On slow speed begin adding in powdered sugar. Add milk one Tablespoon at a time if needed. Add in caramel sauce to your liking Continue mixing until frosting is piping consistency.

Pipe frosting onto cupcakes. And then as if that wasn't enough caramel, melt some remaining caramel sauce and drizzle over the top of each cupcake.

I'm feeling much better just thinking about these cupcakes. Enjoy!

Happy Father's Day

I am so non-creative when it comes to giving gifts.
(I know, cupcakes, but who wants cupcakes for every single holiday or birthday? Okay, I would, but we're talking about normal people here.)
And again I'm such a procrastinator.
It seems I always think of that perfect gift or idea two months ahead of time, but I always wait until a few days before the event to actually try to get it together.
Father's Day has been no different.
I had this idea about 3 months ago to do this project for Dear Hubby.
And of course, I wait until today to try to get it together. Luckily the kids were pretty cooperative today so it came together quickly!
And thank goodness for 1 hour photo processing!
I figured that since Dear Hubby has his own office now that he needed to decorate it up a little bit, and what better way to do that than pictures of the kiddos.

I'm sure you've all see how this project is done.
Simply take pictures of the kids with the letters spelling out whatever you want, print and frame.
I went a little further and used PicMonkey to create a collage, fix up the colors a bit, and then put the label on it (I love PicMonkey now that I'm figuring it out thanks to my friend Ashton from Something Swanky).
I'm sure this project would be great for any occassion.
I'm thinking about making one for myself! That's not too weird is it?
So, if you're a last minute gifter like me, you've still got 8 hours to get this done!!

Week Ten here we go!! I can't believe I've been hosting Sweet & Simple Sunday for ten weeks now (okay a little longer thanks to my slacker self)!

Chocolate Almond Cupcakes {top secret ingredient}

 
 

A couple of months ago I participated in a Trading Blogs Party where we got to swap blogs for a day and share one of our recipes on someone elses page. Hoping to gain more attention for both bloggers. Well, if you didn't hop on over to the other blog to check out my recipe, here it is!
Chocolate Almond Cupcakes
I decided to make chocolate cupcakes using Almond Milk.
And if you've never tried Almond Milk, you are seriously missing out.
I love the stuff, and prefer it so much more over cows milk.
But these cupcakes carry another secret inside their pleated little skirts, they are not only Gluten Free, they have a top secret ingredient...
Quinoa.
(okay a little side note, please excuse the digression, I have to get it out)
So this thing Quinoa. I've been intrigued by this for a while now, and though I haven't been brave enough to try it, I finally decided to put on the big girl panties and cook it up. It was pretty simple to make, and was perfect for these cupcakes, and I will admit, Sophie actually enjoyed it. But I very much disliked it. Not because of the taste or anything like that, but because of the mess it makes.
There are a few things that I abosolutely despise doing in the kitchen.
Chopping Broccoli.
(I hate the little tiny pieces that get everywhere and are impossible to wipe up.)
Using Stainless Bowls.
(I have white countertops, need I say more?)
And now experimenting with Quinoa has been added to this ever growing list. Why you ask?
Because it sticks to everything!
I think Quinoa is one of NASA's Top Secret science projects that went terribly wrong in the easy remove glue department, but went terribly right in the good for you category.
If you're up to it and have figured out a way to prevent this from sticking to every horizontal surface in your kitchen I would highly recommend these cupcakes.
I'm not convincing you am I?
Really, the flavor of these cupcakes outshines the stickiness of the Quinoa completely.
Really. You need to try these.
Okay so enough digression, how about the recipe.
Well here you go!

Chocolate Almond Cupcakes
Ingredients:
2/3 cup white or golden quinoa
1 1/3 cup water
1/3 cup almond milk
4 large eggs
1 tsp. pure vanilla extract
3/4 cup butter, melted and cooled
1 1/2 cups sugar
1 cup cocoa powder
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Directions:
Bring the quinoa and water to a boil in a medium saucepan. Cover, reduce to a simmer and cook for 10 minutes. Turn off the heat and leave the covered saucepan on the burner for another 10 minutes. Fluff with a fork and allow the quinoa to cool.

Preheat the oven to 350°F. Line cupcake tins with liners and set aside.

Combine the milk, eggs and vanilla in a blender or food processor. Add 2 cups cooked quinoa and the butter and continue to blend until smooth.

Whisk together the sugar, cocoa, baking powder, baking soda and salt in a medium bowl. Add the contents of the blender and mix well. Fill the cupcake pans 2/3 full. Bake for 15-18 minutes. Remove from oven, allow to cool in pans for about 5 minutes and then remove to cooling rack. Allow cupcakes to cool completely and frost as desired.

These cupcakes are so rich and chocolatey they didn't need any frosting at all, but they looked kind of naked in the pictures, so I decided to try them with some cream cheese frosting and hazelnut spread.  TA DIE FOR!
So if you need a Gluten Free, Chocolately, Tasty, Craveable Cupcake then these are perfect!

It's Time For A Carnival


It's time to take a trip down memory lane.
Back to a time when riding your bike by yourself on a city street was safe.
A time when playing Ditch 'Em after dark wasn't frowned upon by your parents (just the local law enforcement).
A time when spending every single day at the public pool, by yourself, with your besties and trying to impress that one boy meant more to you than all 45 days of summer vacation.
I remember those days very well. Those were some of the best days of my life.
No cares in the world.
Thinking you were so grown up, when in reality you had no clue what being a grown up really meant.
My parents live just down the street from one of the local Catholic Schools.
Every year the Catholic School would hold it's Annual Festival. To me, it was a Carnival.
They'd close off all of the streets around the school and church.
They'd haul in The Scrambler and Go Gator Coaster and all of the other puking machines and all of the neighborhood kids would spend way too much money on sugary Cotton Candy and the daunting task of winning an inevitably ill gold fish with a limited life span. 
As much as I loved those gold fish, I was all about the Cotton Candy.
I love loved how it would melt in your mouth, and somehow, no matter how careful you were, it would end up all over your face and fingers.
I miss those days.
Although secretly I try to relive those moments vicariously through my kids.
When all of the other parents are screaming, "No, you can't have cotton candy it makes you act crazy", I'm all, "let's buy the ginormous bag!" "We only come to the fair once a year!"

So when I saw that Hayley, The Domestic Rebel made
I was in love.
I was 11 again, riding my pink and purple ten speed bike, taking on the world one bag of cotton candy at a time.
I knew I had to make it.
The recipe is fairly simple. The hardest part for me my kids was staying out of the kettle corn while melting the chocolate.
I hope that when you try this recipe it takes you to a time and place where you feel like a kid again.

Crazy Cooking Challenge-Fruit Smootie Edition

It's round two for me in this Crazy Cooking Challenge, and this month's Challenge was Fruit Smooties & Shakes.

This was a tough one for me believe it or not!
Although I've been known to smootie up anything, I had a hard time finding something unique and different that would not only catch my attention, but also my taste buds.
Then I found this recipe.
 
 
Honeydew Smoothies

Now, not only does she have some of the cutest kids ever, Janiene
is full out creative and crafty!
I just happened to stumble across her page recently and was so excited when she linked up to Sweet & Simple Sunday. I love finding new friends in the blogosphere (well in real-life too, but blogosphere friends totally rock!)
Anyways, I was even more excited when I realized that I had most of the ingredients on hand for these Honeydew Smooties.
And since I've realized that I'm an adult and needed to have appropriate working appliances in my home, I actually have a blender I'm totally happy with.
(Who knew that Strawberry Daquiri's could break down a blender so fast?! I think it was my way of reliving the time spent at the Tiki Bar on our Honeymoon)
Anywho, here's what you'll need for this sweet & summery drink
 
Scoop out the flesh of 1/2 of an organic honeydew melon
1 cup organic plain whole milk yogurt
2 tbsp honey
1-1/2 cups ice

Now just blend her up and enjoy! That's it! Smoothie Simplicity!
Now I do have to admit, I changed it up a bit, but only because I didn't have the plain organic yogurt in my fridge. I had a container of peach Oikos Greek yogurt so that's what I mixed it and it was great! I'm sure that any kind of yogurt would work just perfect in this recipe.

Hello everyone! I'm Dawn & I like to share my sweet treats over at DJ's Sugar Shack. I'm so very excited to be posting at Cups By Kim today! I love Kim's treats. Anyone that makes these Coca-Cola Cupcakes topped with Chocolate Dipped Potato Chips has a permanent place in my heart. Cupcakes and potato chips are two of my favorite things; combining them is ingenious. I was born and raised in New Orleans; after college I decided to spend a summer working in Denali National Park. Twelve years later, despite the frigid winters and the occasional bear on the deck, I'm still in Alaska. This place has to be one of the most beautiful earth. If you ever have the opportunity to visit, don't pass it up. Today I am sharing Raspberry Cream Cheese Cups. These bite sized treats are so versatile. They are a great snack to have in the fridge to satisfy your craving for something sweet and they would be a wonderful addition to any dinner party or desert table at an event.
I'm sure you've seen these raspberries stuffed with chocolate chips on Pinterest. I thought they would be the perfect match for this recipe.
To make them simply stuff a white chocolate chip into the raspberry. Easy!
I found the recipe for the filling on a Pillsbury Mini Pie Crust box years ago. I've tweaked it a bit to suit my taste.
For the cups you will need:
  • 1 package of Athen's Mini Fillo Shells. These can be found in the frozen food section near the pie shells; there are 15 per package.
  • 8 oz of cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup of raspberry jam, heated
  • 1 oz of white chocolate melted, for dipping
Directions:
  • Heat the white chocolate in a ramekin for about 30 seconds in the microwave. Stir until smooth. Dip the bottoms of the Fillo shells into the chocolate and set on wax paper. When all shells are dipped, place in the freezer to harden while you make the filling.
  • In a large bowl, mix the cream cheese and powdered sugar together with an electric mixer. Slowly add the melted raspberry jam into the mixture, according to your taste.
  • Spoon the mixture into the fillo cups
  • Top with stuffed raspberries.
  • Keep refrigerated until you are ready to serve.
I made these last night using dark chocolate for some and white chocolate for the rest. I took them to a small BBQ & they were a big hit. I was amazed at how quickly they disappeared. Sweet & Simple Sunday {nine}

I'm totally a slacker. I've always been that way. In high school I always waited until Sunday night at 7:00 pm to start that French IV research project that was due 4th period Monday morning. It's just how I'm programmed.
Like Sweet & Simple. Usually at 11:00 Saturday night I'm putting together the final touches on that week's Sweet & Simple. This week, it's even worse. It's now 2:30 pm on SUNDAY, and I'm just now putting this together. I hope you don't mind. Trust me, the features are well worth it. And I had an excuse for yesterday. It was the big Birthday in the house.
Aiden turned 7 and Sophie turned 2.
It was a good day. No, it was a Great day!
